Cranberry Scones
Enjoy this great little twist on a tea-time classic, jewelled with dried cranberries, and zesty orange aroma will fill the house as they bake. These are a perfect treat for everyone in the house. And it hardly takes any time to prepare and bake them. Just follow these easy steps in our Cranberry Scones recipe and get the kettle on!
Self-raising flour
Unsalted butter
Soft light brown sugar
Orange zest
Dried cranberries

Step 1 of 3
Preheat oven to 180°C (160°C for fan ovens) Gas mark 4. Rub the cold diced butter into the flour and sugar until it forms bread crumbs. Add the cranberries and mix through. Slowly pour in the evaporated milk while stirring together until a soft dough is forced
Make sure your butter is chilled before you start the recipe. This way your scones will remain fluffy on the inside but crisp on the outside.
Step 2 of 3
Tip the dough on to a floured surface and roll to an inch thick then use a cookie cutter to cut out the scones. Re-roll until all the dough is used up.
Step 3 of 3
Place the scones on a lined tray and brush with remaining evaporated milk. Bake for 20 minutes until golden.
Why not use a little of the juice from the orange in the recipe to beat into some freshly whipped cream. Add a little icing sugar if it needs it and serve with sliced strawberries.
