Super simple to whip up, our No Bake Reindeer Cheesecake is a delightful and oh-ho-tasty treat that will wow your guests and sprinkle a dash of whimsy into your holiday festivities!

No Bake Reindeer Cheesecake
I made two of these for Christmas. They were fabulous. So tasty and the kids loved the Rudolf theme.

For the base:

Digestive biscuits, crushed

175g

Unsalted butter, melted

55g

For the cheesecake:

Full fat cream cheese

300g

Icing sugar, sieved 

80g

Vanilla extract

1 tsp

Whipping cream

225ml

For the decoration:

9 brown coloured chocolate buttons + 1 red coloured chocolate button

Lightly salted pretzels

You will also need: 
20cm loose bottomed cake tin

Step 1 of 4

Put the crushed biscuits into a bowl with the melted butter. Mix thoroughly, then press the mixture into the base of your tin. Pop in the fridge to chill for ten minutes.

Step 2 of 4

Add the cream cheese, caramel, icing sugar & vanilla extract to a large bowl and using an electric hand whisk on slow speed, whisk until completely combined. Add the double cream to a separate bowl and using an electric hand whisk, whisk the cream to soft peaks then fold into the cream cheese mix. 
 

Step 3 of 4

Decant onto the set base and smooth over the top. Pop into the fridge for two hours or until fully set.

Step 4 of 4

When ready to serve, remove the cheesecake from the tin and place on desired serving plate. Cut into 10 pieces. Use the pretzels for antlers, add two edible eyes and the smarties for a nose. Serve, and enjoy!
