Mini Banoffee Pies
Don’t worry if you don’t have any flan tins to hand, a muffin tin works just as well! Simply line the base of the muffin tins with parchment paper before pressing the biscuit base.
These little banoffees are perfect for a dinner party and super easy! Load the crushed biscuit bases with Carnation Caramel a few hours in advance and finish them off just before serving.

Digestive biscuits, crushed
Butter, melted
Medium banana, sliced into 16
Carton whipping cream, softly whipped
Cocoa powder
You will also need…
8 x 7.5cm loose-bottomed flan tins, or muffin tin
Step 1 of 4
Tip the biscuit crumbs into a bowl and mix in the melted butter. Using the back of a teaspoon, press the mixture into the bases and sides of the tins. Chill for about 10 minutes in the fridge until set firm.
Step 2 of 4
Add the caramel to a bowl and mix to loosen it up and divide the between the bases.
Step 3 of 4
Remove the pies from the tins and top the caramel with slices of banana.
Step 4 of 4
When ready to serve, spoon the whipped cream over the caramel, decorate with a banana slice and dust with the cocoa.
