Dubai Chocolate & Pistachio Pancakes
When the viral Dubai Chocolate met Pancake Day. These pancakes are super easy to whip up and the 'Dubai Chocolate' filling comes together in a matter of minutes.

For the pancakes:
Carnation Evaporated Milk or semi-skimmed milk
Plain flour
Medium eggs
Cold water
Vegetable oil
For the filling:
Shredded Wheat
Pistachio cream, melted
For the topping:
Pistachios, chopped
Step 1 of 5
Sieve the flour into a large bowl and crack in the eggs. Use a whisk to gently stir until and slowly add the evaporated milk. Whisk until smooth and then add the cold water.
Step 2 of 5
Place the pan over a high heat for 1 minute and then add a little oil. Wipe hot pan with some kitchen paper towel to remove the excess oil and then pour in just enough pancake mixture to coat the pan. (Swirl the pan whilst pouring for a more even spread).

When the edges start to lift and the centre starts to bubble the pancake is ready to be flipped. Use a spatula to turn the pancake and then cook the other side for another minute. Turn the pancake out onto a plate and keep covered whilst making the rest of the pancakes.

For the filling: add the pistachio paste to a microwave safe bowl and melt for 10-15 seconds. Crush in the shredded wheat and mix until combined.
Step 5 of 5
Place a pancake onto a plate and add a generous spoonful of filling to the middle of the pancake. Fold the pancake into quarters, drizzle over about 1 tbsp of Carnation Chocolate Drizzle and a sprinkling of chopped pistachios. Serve up with some berries or fruit of your choice. Enjoy!
