A must for all banoffee fans. Delicious banana cupcakes with a gorgeous, caramel icing. Yum!

Banoffee Cupcakes
Easy and delicious! Gorgeous cupcakes! Instead of fiddling with teaspoons I used a piping bag filled with caramel to inject them!

For the cupcakes…

Very ripe bananas

2

Self raising flour

125g

Buttery baking spread*

100g

Caster sugar

100g

Eggs

2

Baking powder

1tsp

For the icing…

Icing sugar

300g

Buttery baking spread*

85g

Slices of banana, 3tbsp Carnation Caramel and chocolate shavings to decorate (optional)

*Recipe based on 70% fat buttery baking spread.

You will also need…

12 hole cupcake tin and cupcake cases

Step 1 of 4

Preheat the oven to 180°C (160°C for fan ovens), Gas Mark 4. Place cupcake cases into the tin.

Step 2 of 4

Mash the bananas in a dish and set aside. In a separate large bowl add the flour, buttery baking spread, caster sugar eggs and baking powder and beat until light and creamy (use an electric hand mixer if you have one). Fold in the mashed bananas.

Step 3 of 4

Spoon half the mixture into the cake cases, add a spoonful of caramel into each and top with the remaining cake mix. Bake for about 20 minutes or until springy to the touch. Remove and cool.

Step 4 of 4

Beat 100g caramel with the buttery baking spread and icing sugar to form a thick icing. Spoon into a piping bag with a fluted nozzle and pipe onto the cakes. Beat a few tablespoons of the caramel until smooth and drizzle over the icing. Top with a banana slice and chocolate dusting if you like!

Rated 4 out of 5 by from Plan ahead for leftover caramel Makes lovely moist cupcakes. Note: The tin of caramel is 397g and less than half is used in the recipe so either plan to make a huge batch or think about what you will use the rest for. It only keeps in the fridge for 3 days after opening

Rated 5 out of 5 by from Easy & delicious Gorgeous cupcakes, full of flavour but not overpowering. Instead of fiddling with tea spoons of caramel I baked the cupcakes then as soon as I took them out of the oven I used a piping bag filled with caramel to “inject” them. Super fast & easy.

Rated 5 out of 5 by from Tasty! I made these with gluten free flour, not adding anything to the recipe - just a straight conversion and they turned out really well. Beautifully moist and lovely taste. I topped them with ordinary icing to which I added two teapoonsfuls of caramel for taste and colour, with a little sprinkle of grated chocolate on top - perfect. It set like a fondant and didn't crack enabling me to put a nice thicker layer on. This made them easier to transport as I was making them for a small group. They all loved them and wanted the recipe! I referred them to Carnation of course.

Rated 5 out of 5 by from Hmmmm Banoffee I made these this morning with my two nieces and they turned out lovely and although my niece thinks she hates bananas she has eaten 5 of them. I would Defo recommend these and for me i added a little more carmel on top :)
