Chocolate Salami
Don't worry, we haven't ventured off into the world of experiential baking. Chocolate Salami is a recipe of Italian & Portugese descent made from ingredients you probably already have in your cupboard. Rolled into a long cylinder and cut into discs, the chocolately matrix resembles the red meat of salami with broken biscuits peppered throughout like flecks of fat.
Tea biscuits
Unsalted butter, softened
Cocoa powder
Unsalted pistachios
Step 1 of 6
Add the biscuits to a food processor and pulse until broken into small chunky pieces. Alternatively, place the biscuits into a freezer bag and bash with a rolling pin.

In a large bowl, add the butter, condensed milk, caramel and cocoa and mix together until fully combined.

Add the broken biscuits and nuts and mix everything together until everything is coated in the chocolatey mix.

Lay a large sheet of parchment paper or clingfilm down onto a clean surface and decant the mix across the middle in a log shape. Wrap tightly and pop in the fridge to set.

When ready to serve, unwrap the log and dust the top with icing sugar before slicing into pieces.

Any leftovers can be stored in an airtight container in the fridge for up to three days.
We’ve used tea biscuits and walnuts in our recipe but this works well with any type of plain biscuit or nuts you might have in the cupboard.
