No Bake Millionaore's Cheesecake
We imagine your oven is pretty stuffed this time of year so why not make life easier with our decadent no bake Millionaire’s Cheesecake.
For the base:
Shortbread biscuits, crushed
Unsalted butter, melted
For the cheesecake:
Full fat cream cheese, room temp
Icing sugar
Vanilla extract
Dark cocoa powder
Whipping cream, room temp
For the topping:
Edible gold sparkle spray
You will also need:
20cm loose bottomed cake tin
Step 1 of 5
Reserve a couple of tablespoons of the crushed shortbread and then put the remaining biscuits into a bowl with the melted butter. Mix thoroughly, then press the mixture into the base of your tin. Pop in the fridge to chill for ten minutes.

Add the cream cheese, icing sugar, vanilla and dark cocoa powder to a bowl and using an electric hand whisk, whisk on low speed to combine.

Add the double cream to a separate bowl and using an electric hand whisk, whisk the cream to soft peaks then fold into the cream cheese mix.

Decant onto the set base and smooth over the top. Drizzle over the caramel then pop into the fridge for two hours or until fully set.

When ready to serve, remove the cheesecake from the tin and place on desired serving plate. Sprinkle over the reserved crushed biscuits and decorate with the edible gold sparkle spray. Serve, and enjoy!
